Nutritious Chicken Salad with Microgreens
Chicken salad is the perfect meal to have on a busy day, especially in the spring or summer when you’re working in the garden. This nutritious chicken salad with microgreens is an easy meal on-the-go.

Preparing the Chicken
Firstly, roast a whole chicken in the oven. Allow the chicken too cool. Meanwhile, you can chop the vegetables and cook the bacon. Shred half of the cooked whole chicken and place it in a bowl.
Vegetables for Chicken Salad
Finely chop bell pepper, half an onion and tomato. Add them to the bowl of shredded chicken.
Cooked Bacon
Cook some bacon in a cast iron skillet, we use turkey bacon. Allow the bacon to cool. Chop it and add it to the bowl of chicken and vegetables. Mix it all together.
Mayonnaise and Seasoning
After that, add 1/2 cup of mayonnaise and mix well. Next, add 1/2 tsp. salt, 1/2 tsp. cumin and 1/4 tsp. garlic salt.

Spicy Farm Mix & Radish Microgreens
Lastly, toss a handful of microgreens in the bowl of chicken salad, we used our spicy farm mix. Fold into the chicken salad. In addition, after we plated up our chicken salad we garnished with some radish microgreens to give it an extra kick!

INGREDIENTS
- 1/2 of a Whole Chicken, Cooled and Shredded
- 1 Bell Pepper, Diced
- 1/2 Onion, Diced
- 1 Tomato, Diced
- 1/2 cup Turkey Bacon, Cooked and Chopped
- 1/2 cup Mayonnaise
- 1/2 tsp. Salt
- 1/2 tsp. Cumin
- 1/4 tsp. Garlic Powder
- Handful of Spicy Mix Microgreens
- Garnish, Radish Microgreens
INSTRUCTIONS
