Chocolate Covered Sunflower Microgreens
Preparing the Sunflower Microgreens
To start, rinse your microgreens in cool water and pat them dry with a paper towel. If possible, us a salad spinner instead to remove all water. If they’re slightly wet the chocolate may not stick to them.
Melting Chocolate
The easiest way to melt chocolate is in a double boiler. If you don’t have a double boiler you can use a heat-safe glass bowl. Fill a pan 1/4 full with water and bring it to a gentle boil. Place the double boiler or glass bowl on top, making sure the bowl tightly covers the pot. In addition, make sure there are a few inches of space between the bottom of the bowl and water.
Add 3/4 of the chocolate to the bowl and constantly stir until melted and smooth. Remove the pan from heat and add remaining chocolate chips, stirring until fully melted.

Dry Time
Lay the sunflower microgreens on a prepared baking sheet to dry until the chocolate has hardened.
Speed up the hardening process by placing them in the freezer for no more than three minutes.

- 1 oz. Sunflower Microgreens
- 1 cup Chocolate Chips
- Toppings, if desired.
INSTRUCTIONS
- Wash and dry the sunflowers.
- Prepare toppings, if desired.
- Prepare a parchment lined baking tray.
- Melt 3/4 of the chocolate chips in a double boiler.
- Remove from heat and add remaining chocolate chips. Stir until melted.
- Hold the sunflower by the stem and dip in the chocolate.
- Coat in desired toppings.
- Lay the sunflowers on parchment paper and allow time to dry until the chocolate has hardened.
- Speed up the drying by place them in the freezer for 3 minutes.
- Best if consumed within 1-2 days.
Note: If the bowl of chocolate begins to harden, warm it back up.
